Chicken pizza is a preferred pizza of both kids and adults and healthy eaters and vegetarians alike.

Ingredients

  • For the crust
  • 1 (12-ounce) portion fresh pizza dough

  • 1 teaspoon olive oil

  • Or 1 prebaked 12-inch pizza crust (to save time)

  • For the topping
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces

  • 1 cup shredded part-skim mozzarella cheese

  • 1/2 cup shredded Parmesan cheese

  • 4 ounces cremini mushrooms, sliced

  • 1/4 cup vertically sliced onion

  • 1 red bell pepper, seeded and sliced

  • 3/4 teaspoon crushed red pepper

  • 1 red bell pepper, seeded and sliced

  • 3/4 teaspoon crushed red pepper

  • 2 tablespoons chopped parsley

  • 1 tablespoon olive oil

Directions

  • Place the dough in a large bowl. Coat the dough with olive oil. Cover the bowl with a damp towel and let it rest for 40 minutes.
  • In a large skillet, heat up the oil over medium-high heat. Add in cubed chicken and sauté for 8 minutes or until tender.
  • Remove the mixture from pan. Add 1 tablespoon oil to pan and heat up. Add in onion, mushrooms, and garlic; stir-fry for 5 minutes.
  • Transfer the dough to a lightly floured surface. Punch down and knead on board about 2 minutes.
  • To make the crust, spray pizza pan with some olive oil. Place in the dough and spread with some cheese.
  • Arrange chicken, vegetable mixture and bell pepper over the cheese. Top with remaining cheese and crushed red pepper.
  • Bake in preheated oven at 400° for 20 minutes or until the cheese is melted.
  • Once cooked, remove the pizza from the oven and sprinkle with herbs. Slice and serve immediately.
