Ingredients

  • 6 uncooked bacon strips, cut into bite-sized pieces

  • 2 lb pork loin chops, boneless

  • 8 oz mushrooms, sliced

  • 2/3 cup chicken broth

  • 1/2 cup heavy cream

  • 2 garlic cloves, minced

  • 5 sprigs fresh thyme (leaves)

  • 2 tbsp flour

  • 1 tbsp olive oil

  • salt and pepper

Directions

  • Season pork chops with salt and pepper. Set aside.
  • Heat up some oil in a large skillet over medium heat. Add in bacon and cook until tender. Transfer to a plate, leaving the fat in pan.
  • Add seasoned pork chops to the pan and cook for about 4 minutes on each side, until nicely seared. Reduce heat to medium midway through cooking. Transfer cooked pork chops to a plate.
  • In the same pan, add in sliced mushrooms and minced garlic. Add 1 tablespoon olive oil if needed. Season with salt and sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring quite often; until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms and stir until well combined.
  • Add chicken broth to pan and bring to a boil, constantly stirring. Add heavy cream and stir until smooth. Then reduce the heat to low.
  • Return cooked pork chops and bacon to pan. Cover with a lid and cook on low heat, until the pork chops are cooked through.
  • Once cooked, remove from heat. Let cool for 5 minutes and serve.

Notes

  • When eating, you may top your pork chops with more fresh thyme leaves if you like. Enjoy!

FAQ

Is Keto Bacon and Mushroom Smothered Pork Chops suitable for a ketogenic diet?
Yes. This dish is high in protein and fats and relatively low in carbohydrates, making it suitable for a ketogenic or low-carb diet when portioned correctly.

How many net carbs are in one serving of this recipe?
Each serving contains approximately 6 grams of net carbs, mainly coming from mushrooms, cream, and the small amount of flour used in the sauce.

Why is flour included, and is it keto-friendly?
Flour is used to thicken the sauce. While traditional flour is not ideal for strict keto, the small amount used across multiple servings is generally acceptable. For stricter keto, it can be replaced with xanthan gum or omitted.

What cut of pork works best for this recipe?
Boneless pork loin chops are ideal because they cook quickly and remain tender when properly seared and simmered in the sauce.

Can I use bone-in pork chops instead?
Yes. Bone-in pork chops can be used, but cooking time may need to be increased slightly to ensure they are fully cooked.

Are mushrooms keto-friendly?
Yes. Mushrooms are low in net carbs and commonly used in keto recipes. They add flavor, texture, and volume without significantly impacting carb counts.

Can I substitute heavy cream with another ingredient?
Heavy cream is recommended for best texture and keto compliance. Using milk or half-and-half will increase carbs and reduce creaminess.

How do I prevent pork chops from becoming dry?
Avoid overcooking the pork chops and allow them to finish cooking gently in the sauce. Searing first and then simmering helps keep them juicy.

Can this dish be made ahead of time?
Yes. It can be prepared ahead and reheated gently on the stovetop. The flavors often improve after resting.

How should leftovers be stored?
Leftovers should be stored in an airtight container in the refrigerator and consumed within 3–4 days. Reheat slowly to maintain the creamy sauce texture.
