Ingredients

  • 4 cups broccoli, cut into small florets

  • 3 cups cheddar cheese, shredded

  • 3 1/2 cups chicken broth (or vegetable broth, or bone broth)

  • 1 cup heavy cream

  • 4 cloves garlic, minced

Directions

  • Heat up some oil a large pot over medium heat. Add in garlic and sauté for one minute, until fragrant.
  • Stir in chicken broth, heavy cream, and chopped broccoli. Bring the heat to a boil, then reduce and simmer for 10-20 minutes, until broccoli is tender.
  • Add in shredded cheddar cheese gradually, stirring constantly, and continue to stir until melted.
  • Remove from heat. Serve in cup while hot.

Notes

  • When adding the cheese in the pot, make sure that you keep the heat at a very low simmer to prevent seizing. Enjoy!
