Ingredients

  • 1 head cauliflower, cut into florets

  • 1 tablespoon extra virgin olive oil

  • 4-6 thyme springs

  • 1/4-1/3 cup sour cream to taste

  • kosher salt to taste

  • freshly ground black pepper to taste

  • Melt butter in a small saucepan over medium-low heat. Continue to cook for a couple minutes until it just begins to turn golden. Add in garlic, a couple more thyme springs and continue to cook for 2-3 minutes, until browned.

  • Reheat right before serving.

Notes

  • If you want your mashed cauliflower thicker, add in some heavy cream or unsweetened almond milk. Enjoy!

FAQ

Is keto cauliflower mashed potatoes really a good substitute for traditional mashed potatoes?
Yes. While it does not taste exactly like potatoes, cauliflower mashed potatoes offer a creamy texture and savory flavor that works very well as a low-carb alternative.

Is this dish suitable for a keto diet?
Yes. Cauliflower is naturally low in carbohydrates, and the added fats from butter, olive oil, and sour cream make it keto-friendly.

Can I make this recipe dairy-free or vegan?
Yes. You can replace butter with vegan butter or olive oil, omit the Parmesan cheese, and use a dairy-free sour cream alternative to make it vegan.

Why roast the cauliflower instead of boiling it?
Roasting removes excess moisture and adds a deeper, richer flavor. This helps prevent the mash from becoming watery.

How do I make the mash extra creamy?
Blending thoroughly in a food processor and adding sour cream or butter gradually will help achieve a smooth, creamy consistency.

Can I prepare keto cauliflower mashed potatoes ahead of time?
Yes. You can prepare them in advance and store them in the refrigerator for up to 3 days. Reheat gently before serving.

Can this dish be frozen?
It can be frozen, but the texture may change slightly after thawing. Re-blending or stirring well after reheating can help restore creaminess.

What can I serve with keto cauliflower mashed potatoes?
They pair well with roasted chicken, steak, pork chops, grilled fish, or other keto-friendly main dishes.

How do I prevent the mash from tasting bland?
Proper seasoning is key. Adjust salt and pepper to taste and consider adding extra garlic, herbs, or cheese for more flavor.

Is this recipe gluten-free?
Yes. All ingredients are naturally gluten-free, making it suitable for gluten-free diets.
