Keto Pistachios balls are a worth-serving keto food and a favorite snack of both kids and adults alike.

Ingredients

  • 2 1/2 (20g) tbsp ground pistachios

  • 1 tbsp (8g) finely ground almond flour

  • 1 tbsp (15g) granulated erythritol

  • 1 1/2 tsp (10g) softened butter

  • 1/2 tsp sugar-free vanilla extract

  • 1/2 tsp lemon juice

Directions

  • Place pistachios into a food processor and blend for 20 seconds until you no chunks left.
  • Combine all ingredients in a small bowl. Mix until a smooth and the mixture become dough-like.
  • Scoop out 1/4 of the mixture at a time and roll out small balls with your hands. Or, the mixture in the freezer for 10-15 minutes then form the balls. It will be much easier.
  • Chill in the fridge for 1 hour before serving.

Notes

  • For the leftovers, store them in an airtight container or cover with plastic wrap and keep in the fridge for up to 3-4 days.
