Ingredients
2 1/2 (20g) tbsp ground pistachios
1 tbsp (8g) finely ground almond flour
1 tbsp (15g) granulated erythritol
1 1/2 tsp (10g) softened butter
1/2 tsp sugar-free vanilla extract
1/2 tsp lemon juice
Directions
- Place pistachios into a food processor and blend for 20 seconds until you no chunks left.
- Combine all ingredients in a small bowl. Mix until a smooth and the mixture become dough-like.
- Scoop out 1/4 of the mixture at a time and roll out small balls with your hands. Or, the mixture in the freezer for 10-15 minutes then form the balls. It will be much easier.
- Chill in the fridge for 1 hour before serving.
Notes
- For the leftovers, store them in an airtight container or cover with plastic wrap and keep in the fridge for up to 3-4 days.
