Ingredients
1/2 cup almond flour
2 tbsp coconut flour
1 tsp cinnamon
1/2 tsp baking powder
1-2 tbsp granulated sweetener of choice
3 large eggs
1/4 cup milk of choice
1/4 cup fresh blueberries
Directions
- Place all ingredients in a high-speed blender, except blueberries, and mix until they become a thick batter.
- Pour batter into a large mixing bowl and stir through blueberries. Allow to rest for 5-10 minutes, to thicken. Add some more milk if needed.
- Preheat a greased large non-stick pan over low-medium heat. Drizzle with some oil and spread well. Pour 1/4 cup portions of the batter onto the pan and cover immediately. Cook for 2-3 minutes per side, until the edges golden.
- Once cooked, serve immediately, or cool completely before storing in the fridge.
Notes
- If you prefer flourless pancakes, replace almond flour and coconut flour with rolled oats and a medium banana. And, drizzle the cakes with some honey for a better flavor.

FAQ
Are Keto Blueberry Pancakes suitable for a ketogenic diet?
Yes. These pancakes are keto-friendly when blueberries are used in small amounts and combined with low-carb flours like almond flour and coconut flour.
Why are both almond flour and coconut flour used?
Almond flour provides moisture and richness, while coconut flour helps absorb liquid and give structure. Using both results in a better pancake texture.
Are blueberries allowed on a keto diet?
Blueberries are higher in carbs than some berries, but small portions can fit into a keto diet. This recipe uses a controlled amount per serving.
Can I use frozen blueberries instead of fresh?
Yes. Frozen blueberries can be used, but they should be thawed and drained to prevent excess moisture in the batter.
What type of milk works best for this recipe?
Unsweetened almond milk, coconut milk, or macadamia milk work best. Avoid sweetened or dairy milk to keep carbs low.
Why should the batter rest before cooking?
Resting allows the coconut flour to absorb moisture, thickening the batter and improving pancake structure.
Can I make these pancakes dairy-free?
Yes. Use a dairy-free milk such as almond or coconut milk and cook with coconut oil instead of butter.
Can these pancakes be made ahead of time?
Yes. They can be stored in the refrigerator for up to 2 days and reheated gently in a pan or microwave.
How do I prevent pancakes from burning?
Cook them over low to medium heat and keep the pan lightly greased. Keto pancakes cook more slowly than traditional ones.
What toppings are keto-friendly for blueberry pancakes?
Butter, sugar-free syrup, whipped cream without sugar, or a few extra berries are all keto-friendly topping options.
