Ingredients

  • 4 boneless pork loin chops (1/2 inch thick and 4 ounces each)

  • 1 garlic clove, minced

  • 1 teaspoon rubbed sage

  • 1 teaspoon dried rosemary, crushed

  • 1/2 teaspoon salt

  • 1/8 teaspoon pepper

  • 1 tablespoon butter

  • 1 tablespoon olive oil

  • 3/4 cup dry white wine or apple juice

  • 1 tablespoon minced fresh parsley

  • For the curry
  • 1 tbsp red chilli powder

  • 1 tea spoon vegetable oil

  • 2 tbsp coconut powder

  • 1 cup water

Directions

  • In a bowl, add garlic, sage, dried rosemary, salt and pepper. Mix to combine and rub the mixture over both sides of pork chops.
  • Heat up butter and oil in a large nonstick skillet over medium-high heat. Add in pork and brown on both sides. Remove from pan.
  • In the same pan, bring wine to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until liquid is reduced to 1/2 cup.
  • Bring pork chops back to the pan and return to a boil. Bring to a simmer, covered, until pork is tender, 6-8 minutes. Sprinkle with parsley.

Notes

  • You can replace white dry wine with apple juice if you prefer. Also, serve it with baked vegetables of your choice. Enjoy!
