Ingredients

  • 2 lb. extra lean ground beef (93% lean)

  • 4 oz reduced fat cream cheese, cubed

  • 1 cup shredded cheddar, divided

  • 1 tsp fine sea salt

  • 1/4 tsp black pepper

  • 2 tsp garlic powder

  • 1 tsp onion powder

  • 1/4 tsp cayenne pepper

  • Olive oil spray for pan

  • 2 tbsp chopped parsley for garnish

Directions

  • Preheat the oven to 400 degrees F. Lightly spray a 2-quart casserole dish with olive oil and set aside.
  • Heat up some olive oil in a large nonstick skillet over medium-high heat.
  • Add ground beef to the skillet. Sauté and break up the meat into small pieces, until meat is no longer pink, about 5 minutes. Remove and set aside.
  • Reduce the heat to medium. Add in salt, pepper, garlic powder, onion powder and cayenne. Return cooked beef to the skillet. Mix well. Stir in cream cheese and cooked until fully melted and combined.
  • Turn the heat off, and add 1/2 cup of the shredded cheddar into the beef mixture. Mix well.
  • Transfer the beef mixture to the prepared casserole dish. Sprinkle with the remaining 1/2 cup cheddar on top.
  • Bake in preheated oven about 10 minutes, until the cheese is melted.
  • Once cooked, remove from the oven. Let it sit for 7 minutes. Garnish with parsley and serve.

  • For the leftover, you might store in the fridge and use within 3 days. Don’t forget to re-heat them before serving.
