Made with chicken, cheddar cheese, sour cream, heavy cream and broccoli, Keto chicken broccoli casserole is a mouth-watering appetizer and main course of both kids and adults, and low-carb dieters and healthy eaters.

Ingredients

  • 20 oz. chicken breast, cooked and shredded

  • 1 oz. pork rinds

  • 2 cups fresh broccoli (or frozen), cut into small florets

  • 1 cup cheddar cheese, shredded

  • 1/2 cup sour cream

  • 1/2 cup heavy cream

  • 1/2 tsp paprika

  • 1 tsp oregano

  • 2 tbsp olive oil

  • Salt and pepper to taste

Directions

  • Preheat the oven to 450°F.
  • Bring a pot of lightly saltwater to boil. Parboil the cauliflower for a few minutes. Drain thoroughly.
  • In a deep mixing bowl, combine shredded chicken, broccoli florets, olive oil and sour cream. Mix to combine thoroughly.
  • Place the chicken and broccoli into a greased 8×11 inch baking dish. Spread them into an even layer, pressing firmly.
  • Drizzle heavy cream evenly over the casserole. Sprinkle with salt, pepper, paprika and oregano on top. Top with shredded cheddar cheese.
  • Into a ziploc bag, add 1 oz. of pork rinds and crush them with either your hands or a rolling pin. Add these crushed pork rinds over the shredded cheese for a crispy casserole top.
  • Bake for about 20-25 minutes, until the casserole slightly bubbles and the edges brown.
  • Once baked, remove from the oven. Let it sit for 5 minutes. Serve.
