Ingredients
2 cups cooked and shredded chicken
16 ounces riced cauliflower
12 ounces broccoli florets
3 cups grated cheddar, divided
2 large eggs, beaten
4 slices bacon
1 teaspoon mustard powder
1 teaspoon garlic powder
1/2 teaspoon cracked pepper
1 teaspoon salt
Directions
- Preheat the oven to 350 degrees F.
- Bring a pot of lightly saltwater to boil. Parboil the cauliflower and broccoli for a few minutes. Drain thoroughly.
- Heat up some oil in a pan over medium heat. Add in bacon and fry until crispy. Remove, crumble it into small pieces, and set aside.
- In a large bowl, combine cauliflower, chicken, bacon, eggs, 2 1/2 cups cheddar, and spices. Stir well to combine.
- Spread the mixture into a 9×13 in. baking dish and sprinkle the remaining 1/2 cup cheese on top.
- Bake uncovered in preheated oven for 30 minutes, until casserole turns bubbly and light brown around the edges.
- Once baked, remove from the oven, let cool for a few minutes and serve.
