Ingredients

  • 8 chicken drumsticks

  • 2 garlic cloves, minced

  • 2 tbsp fresh parsley. chopped

  • 2 tbsp Dijon mustard

  • 2 tbsp lemon juice

  • 2 tbsp olive oil

  • salt and pepper to taste

Directions

  • In a small bowl, combine garlic, parsley, Dijon mustard, lemon juice, olive oil, salt and pepper. Mix until well blended.
  • Transfer chicken drumsticks to a mixing bowl. Pour the marinade over the drumsticks and use your hands to coat the chicken. Marinate for 6 hours or preferably overnight.
  • Preheat the oven to 400˚ F and line a baking sheet with foil. Place rack over a baking tray and place the drumsticks on the rack.
  • Brush chicken with any extra marinade left in the mixing bowl. Bake for 25 minutes, then turn the drumsticks over and bake for another 25 minutes. For crispier skin, broil on high heat for the last 2 to 3 minutes.
  • Remove and serve.

Notes

  • To make it a complete meal, you may serve these crispy chicken drumsticks with a favorite low-carb salad.
