Ingredients
2 cups (7 oz) almond flour
1 tsp (0.2 oz) baking powder
1/2 cup (3.5 oz) butter, melted
2 tbsp (1 oz) coconut oil
7 large eggs
1/2 tsp xanthan gum
1/2 tsp salt
Directions
- Preheat the oven to 355 degree F. Line the bottom of a 8.5 x 4.5 in loaf pan with parchment paper.
- In the large bowl, fork whisk the eggs for about 1-2 minutes. Add in coconut oil and melted butter. Stir until well combined.
- Add in almond flour, baking powder, xathan gum and salt to the bowl. Mix well.
- Transfer the batter to the prepared loaf pan. Press the top evenly with your hands, forming a rounded top.
- Bake in preheated oven for 45 minutes, until deep golden.
- Once baked, let it rest in the oven for 5 minutes; remove and let cool completely. Slice and serve.
Notes
- You can store your bread in an airtight container in the fridge and use within 7days. Don’t forget to lightly roast them before serving.
