Ingredients

  • For marinated chicken
  • 1 lb chicken, sliced thinly

  • 1/4 cup chicken broth

  • 1 red bell pepper, sliced

  • 1 yellow pepper, sliced

  • 1 medium size onion, sliced

  • 2 tbsp olive oil divided

  • For Fajita mix
  • 1 tsp dried oregano

  • 1 tsp chili powder

  • 1/2 tsp salt

  • 1/4 tsp garlic powder

  • 1/4 tsp ground cumin

  • Flour tortillas

Directions

  • Heat up 1 tbsp of olive oil in the skillet over medium-high heat. Add in peppers and onion, sauté until tender (about 5-7 minutes).
  • Remove the vegetables to a plate. Set aside.
  • Add remaining olive oil and chicken in the skillet. Stir-fry for 8 minutes, until the chicken is no longer pink and fully cooked.
  • Add spices and chicken broth; bring to a boil then turn to simmer. Bring peppers and onions back to the skillet. Heat for about 3-5 minutes.
  • Serve immediately.

Notes

  • Aside from flour Tortillas, you can also make this chicken Fajitas with lettuce wraps and add in favorite toppings that keep track on your diet.
