Ingredients
2/3 cup heavy whipping cream
2/3 cup water or unsweetened almond milk
2 egg yolks
4-6 tablespoons Swerve or xylitol, to taste
2 teaspoons vanilla extract
Directions
- To make keto milk, combine heavy cream and water to a medium saucepan and bring just to a boil, stirring every so often. Remove from heat and let it cool slightly.
- Add egg yolks and sweetener to a large bowl. Using a whisk or an electric mixer, beat them until light and fluffy. Gradually temper the milk mixture into the egg mixture.
- Bring the mixture back to saucepan, and simmer over low heat for roughly 8-10 minutes, or until your mixture just begins to simmer.
- Remove from heat and transfer to a medium mixing bowl. Stir in vanilla extract. Cover and chill in the fridge overnight. Pour in your coffee or tea and enjoy!
- Store in the fridge up to 5 days, or freeze in an ice cube tray for about a month.
Notes
- Aside from vanilla extract, you may also add cacao powder, cinnamon, maple extract or pumpkin pie spices to the coffee to make flavor.
FAQ
Is this Keto Coffee Creamer suitable for a ketogenic diet?
Yes. This coffee creamer is made with heavy cream, egg yolks, and keto-approved sweeteners, making it low in carbohydrates and appropriate for a ketogenic lifestyle when consumed in moderation.
Does this keto coffee creamer taste like regular creamer?
Yes. It has a rich, creamy texture and a lightly sweet vanilla flavor that closely resembles traditional coffee creamer, without added sugar.
Can I use almond milk instead of water?
Yes. Unsweetened almond milk can be used in place of water to create a slightly creamier texture and add subtle flavor while remaining keto-friendly.
Why are egg yolks included in this recipe?
Egg yolks help thicken the creamer and create a smooth, custard-like consistency. They also add richness and healthy fats.
Is it safe to consume egg yolks in this creamer?
Yes. The egg yolks are gently cooked during the simmering process, which helps ensure food safety when the recipe is prepared correctly.
Can I use a different sweetener instead of Swerve or xylitol?
Yes. Other keto-friendly sweeteners such as erythritol or monk fruit can be used. Sweetness levels vary, so adjust the amount to taste.
How long does this coffee creamer last in the refrigerator?
The creamer can be stored in an airtight container in the refrigerator for up to 5 days. Shake or stir before each use, as separation may occur.
Can this keto coffee creamer be frozen?
Yes. It can be frozen in an ice cube tray for up to one month. Thaw cubes in the refrigerator or add directly to hot coffee.
Do I need special equipment to make this recipe?
No. A whisk works fine, though an electric mixer can make beating the egg yolks easier. No blender is required.
Can this creamer be used in drinks other than coffee?
Yes. It can also be used in tea, iced coffee, or other keto-friendly beverages that benefit from a creamy texture.
