Ingredients
1 lb raw peanuts shelled
2 tbsp coconut oil melted
1 tsp vanilla extract
1 tbsp So Nourished Erythritol
1/2 tsp sea salt
Directions
- Preheat the oven to 350F.
- In a bowl, combine coconut oil, vanilla extract, erythritol and salt. Add in peanuts and mix well.
- Line a baking tray with parchment paper, transfer peanut mixture to the tray and bake for 10-12 minutes.
- Once cooked, remove from the tray. Let cool. Pour the butter into a food processor and blend for 4-5 minutes, until smooth and creamy. Serve.
