If you prefer something other than chicken and beef to add to your keto diet, this rich creamy bacon and mushroom smothered pork chop recipe is worth saving.

Ingredients

  • 6 uncooked bacon strips, cut into bite-sized pieces

  • 2 lb pork loin chops, boneless

  • 8 oz mushrooms, sliced

  • 2/3 cup chicken broth

  • 1/2 cup heavy cream

  • 2 garlic cloves, minced

  • 5 sprigs fresh thyme (leaves)

  • 2 tbsp flour

  • 1 tbsp olive oil

  • salt and pepper

Directions

  • Season pork chops with salt and pepper. Set aside.
  • Heat up some oil in a large skillet over medium heat. Add in bacon and cook until tender. Transfer to a plate, leaving the fat in pan.
  • Add seasoned pork chops to the pan and cook for about 4 minutes on each side, until nicely seared. Reduce heat to medium midway through cooking. Transfer cooked pork chops to a plate.
  • In the same pan, add in sliced mushrooms and minced garlic. Add 1 tablespoon olive oil if needed. Season with salt and sprinkle with fresh thyme leaves. Cook on medium heat for about 5 minutes, stirring quite often; until mushrooms soften and release juices. Sprinkle 2 tablespoons of flour all over the mushrooms and stir until well combined.
  • Add chicken broth to pan and bring to a boil, constantly stirring. Add heavy cream and stir until smooth. Then reduce the heat to low.
  • Return cooked pork chops and bacon to pan. Cover with a lid and cook on low heat, until the pork chops are cooked through.
  • Once cooked, remove from heat. Let cool for 5 minutes and serve.

Notes

  • When eating, you may top your pork chops with more fresh thyme leaves if you like. Enjoy!
