Ingredients
1 package (12 ounces) North Country Smokehouse Bacon
3 skinless boneless chicken breasts
1 1/4 cup chopped broccoli
4 ounces cream cheese, softened
1/4 cup grated Parmesan Cheese
2 tbsp mayonnaise
1 clove garlic, minced
1 tbsp olive oil
1 tsp smoked paprika
1 tsp salt, divided
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Directions
- Preheat the oven to 375 degrees F.
- Place chicken on cutting board. Using a sharp knife, cut a pocket on the side of each chicken breast. Drizzle with olive oil.
- In a small bowl, add spices plus 1/2 teaspoon of salt. Mix with a spoon. Sprinkle spices over the chicken on both sides.
- In another bowl, mix cream cheese, Parmesan, Mayo, minced garlic, remaining 1/2 tsp salt. Mix well, stir in broccoli.
- Spoon the cheese mixture evenly into each chicken breast. Close chicken breasts with toothpicks.
- Wrap bacon around each chicken breast until covered. Place wrapped chicken on a foil covered baking sheet.
- Bake in preheated oven for 30-40 minutes, until chicken is cooked through. Place pan under broiler to make the bacon crispier if desired. Keep a close eye to make sure it doesn’t burn.
- Once cooked, remove from the oven and remove toothpicks. Serve while hot.
Notes
- Serve it alongside a tasty low-carb salad or cauliflower rice if you prefer.
FAQ
Is Keto Bacon Wrapped Chicken suitable for a ketogenic diet?
Yes. This dish is low in carbohydrates and high in fat and protein, using chicken breasts, bacon, cream cheese, and parmesan, making it well suited for a ketogenic lifestyle.
Does this recipe really contain only 4 grams of carbs per serving?
Yes. The small amount of carbs comes mainly from broccoli and dairy ingredients, with fiber offsetting part of the total carbohydrates.
Why is broccoli included in the filling?
Broccoli adds texture, nutrients, and fiber while keeping the recipe low-carb. It also balances the richness of the cheese and bacon.
Can I use chicken thighs instead of chicken breasts?
Yes. Boneless, skinless chicken thighs can be used, but they may be smaller and harder to stuff. Cooking time may need to be adjusted slightly.
What type of bacon works best for this recipe?
Regular-cut bacon works best, as thick-cut bacon may not crisp fully within the baking time. Choose sugar-free bacon to keep the dish keto-friendly.
Do I need to secure the chicken with toothpicks?
Yes. Toothpicks help keep the filling inside the chicken while baking. Remember to remove them before serving.
Can I prepare this dish ahead of time?
Yes. You can assemble the stuffed and wrapped chicken breasts ahead of time and refrigerate them for up to 24 hours before baking.
How do I ensure the chicken is fully cooked?
The chicken is done when it reaches an internal temperature of 165°F (74°C). The bacon should be cooked and slightly crispy on the outside.
Can this recipe be frozen?
Yes. You can freeze the assembled, uncooked chicken for up to one month. Thaw in the refrigerator overnight before baking.
What side dishes pair well with Keto Bacon Wrapped Chicken?
This dish pairs well with cauliflower mash, roasted asparagus, sautéed zucchini, or a fresh low-carb salad.
