Ingredients

  • 1 ripe banana

  • 2 eggs

  • 1/4 cup almond flour

  • 2 tsp sugar alternative

  • 1/2 tsp ground cinnamon

  • 1/4 tsp baking powder

  • 2 1/2 tbsp chopped walnuts

Directions

  • Mash the banana in a bowl. Whisk in eggs. Stir in almond flour, sugar alternative, ground cinnamon, and baking powder. Stir in chopped walnuts.
  • Heat up a skillet over medium heat and drizzle with some oil. Once hot, scoop the batter using a 1/4 cup measuring cup.
  • Cook for about 2 minutes, until the edges are golden brown and then flip over to cook on the other side.
  • Once cooked, serve immediately, or let them cool completely before storing in the fridge.
