Ingredients
1 ripe banana
2 eggs
1/4 cup almond flour
2 tsp sugar alternative
1/2 tsp ground cinnamon
1/4 tsp baking powder
2 1/2 tbsp chopped walnuts
Directions
- Mash the banana in a bowl. Whisk in eggs. Stir in almond flour, sugar alternative, ground cinnamon, and baking powder. Stir in chopped walnuts.
- Heat up a skillet over medium heat and drizzle with some oil. Once hot, scoop the batter using a 1/4 cup measuring cup.
- Cook for about 2 minutes, until the edges are golden brown and then flip over to cook on the other side.
- Once cooked, serve immediately, or let them cool completely before storing in the fridge.
