Ingredients

  • 2 oz plain cream cheese, soften

  • 1/4 cup butter, softened

  • 3 cup blanched almond flour

  • 1 large egg white

  • 1/2 cup Erythritol

  • 2 tsp vanilla extract

  • 1/4 tsp sea salt

Directions

  • Preheat the oven to 350 degrees F. Line a large cookie sheet with parchment paper.
  • In a large mixing bowl, combine butter, cream cheese, and Erythritol. Beat with Use a hand mixer or stand mixer until fluffy and light in color.
  • Beat in the vanilla extract, salt and egg white. Beat in almond flour, 1/2 cup at a time.
  • Use a medium cookie scoop (about 1 1/2 tbsp) to scoop balls of the dough onto the prepared cookie sheet. Flatten with your palm.
  • Bake in preheated oven for about 15 minutes, until the edges are lightly golden. Allow to cool completely in the pan before handling.

Notes

  • You might use up to 3/4 cup of Erythritol if you prefer sweeter cookies. Enjoy!
