Ingredients
1 lb green beans, trimmed
6 slices bacon
2 cups mushrooms, sliced
1 cup onion, diced
2/3 cup half and half cream
1/3 cup 2% milk (or 1/2 cup almond milk)
1/4 cup full fat cream cheese
1 1/4 tsp sea salt
1/4 tsp pepper
Directions
- Preheat the oven to 350 degree F.
- Heat up a large frying pan over medium heat. Add in bacon and cook until very golden brown and crispy on each side. Once cooked, transfer to a plate lined with a paper towel to remove any excess fat. Discard most of the fat in the pan, reserving about 1 tablespoon.
- Heat the pan to medium/high and add in mushrooms and onion. Saute for about 3 minutes, until golden brown; stirring occasionally.
- Add all the other ingredients to the pan, except green beans. Bring to a boil. Stirring constantly, until the mixture begins to thicken, about 4 minutes. Reduce the heat to medium and cook, stirring occasionally, until the mixture is very thick, like condensed soup, about 7-8 minutes.
- Bring a large pot of salted water to a boil. Add in the green beans and cook until they just begin to become fork tender, about 7-8 minutes. Drain and pat them with a paper towel.
- Add green beans into the sauce and stir until well coated. Pour into an 8×8 inch pan and bake until bubbly, about 15-20 minutes.
- Once the green beans are cooked, place the bacon in a food processor and pulse until small crumbs form. Sprinkle on the casserole and then bake for more 5 minutes.
Notes
- You do not have half –and-half cream, you can use full-fat coconut milk, instead. Don’t worry about its flavor because it still tastes good when combined with other ingredients.

Keto Green Bean Casserole – Tips & Notes
Quick & Easy:
This casserole is simple to prepare, taking about 20 minutes of prep time and under an hour total to cook, making it an ideal keto-friendly side dish for busy weeknights or holiday meals.
Tips for Best Results:
- Green Beans: Blanch the green beans just until fork-tender to keep them crisp and vibrant. Overcooking can make them mushy in the casserole.
- Bacon: Cook bacon until very crispy to enhance texture. Save about 1 tablespoon of the rendered fat to sauté mushrooms and onions for maximum flavor.
- Cream Sauce: Stir constantly when adding cream and cream cheese to prevent curdling. Adjust thickness by simmering longer if needed.
- Mushrooms & Onions: Sauté until golden brown to develop deep, savory flavors in the casserole.
Serving Suggestions:
- Serve hot as a side for keto-friendly mains like roasted chicken, pork chops, or grilled steak.
- Can be paired with mashed cauliflower or cauliflower rice for a hearty, low-carb meal.
Storage:
- Store leftover casserole in an airtight container in the refrigerator for up to 3 days.
- Reheat in the oven at 350°F until warmed through to maintain texture.
- You can also freeze the casserole for up to 1 month; thaw overnight in the fridge before reheating.
Variations:
- Dairy Alternatives: Use almond milk or coconut milk to make it dairy-free while keeping it creamy.
- Cheese Add-Ins: Sprinkle shredded cheddar or Parmesan into the cream sauce for an extra layer of flavor.
- Herbs & Spices: Add thyme, rosemary, or garlic powder to enhance depth of flavor.
This keto green bean casserole combines crispy bacon, tender green beans, and a rich creamy sauce for a savory, low-carb side dish that works well for family dinners and holiday feasts alike.
