Ingredients

  • For the tart base:
  • 1 1/2 cup almond flour

  • 1 egg large

  • 3/4 cup desiccated coconut, unsweetened

  • For the filling:
  • 10.5 oz cream cheese

  • 10.5 oz sour cream

  • 1 lemon, zest and juice

  • 2 tbsp powdered sweetener

  • 12 g / 1 pack gelatine

Directions

  • Preheat your oven to 356 degree F. Line the bottom of a tart/pie dish with baking paper and grease the sides.

  • Remove from the oven and let it rest. Then remove tart base from the pan.
  • In a bowl, combine cream cheese, sour cream, sweetener, lemon juice and zest. Mix until smooth.
  • Dissolve your gelatine (according to your manufacturer’s instructions) and add to the filling mixture. Blend and fill into the tart base.
  • Cool the tart in the fridge until set, a minimum of 2 hours or overnight. Serve.

Notes

  • If you do not have almond flour, ground almond would be a great substitute. Top the cheesecake with lemon or any fruits to your liking.

FAQ

Is this Keto Lemon Cheesecake suitable for a strict keto diet?
Yes. This cheesecake is low in carbohydrates, with approximately 5.8 grams of carbs per serving. It uses almond flour, unsweetened coconut, and keto-friendly sweeteners, making it suitable for a ketogenic lifestyle.

Can I make this cheesecake without baking the crust?
Baking the crust is recommended to help it set properly and develop flavor. Skipping this step may result in a soft or crumbly base that does not support the filling well.

What type of sweetener works best for this recipe?
Powdered keto sweeteners such as erythritol, monk fruit, or keto baking blends work best. Powdered sweeteners dissolve more evenly and help maintain a smooth cheesecake texture.

Can I substitute gelatin with another ingredient?
Gelatin is essential for setting the filling. Agar-agar can be used as a substitute, but the quantity and preparation method differ and may slightly change the final texture.

Is this cheesecake gluten-free?
Yes. Both almond flour and unsweetened desiccated coconut are naturally gluten-free, making this dessert safe for those avoiding gluten.

How long does the cheesecake need to chill before serving?
The cheesecake should be chilled for at least 2 hours to set. For the best texture and clean slices, chilling overnight is recommended.

How should leftovers be stored?
Leftovers should be stored in an airtight container in the refrigerator and consumed within 3–4 days. The flavor often improves after resting overnight.

Can this cheesecake be frozen?
Yes. The cheesecake can be frozen for up to one month. Thaw it slowly in the refrigerator before serving to preserve its creamy texture.

Can I use bottled lemon juice instead of fresh lemon?
Fresh lemon juice and zest are strongly recommended for the best flavor. Bottled lemon juice may produce a less vibrant citrus taste.

Is this dessert suitable for parties or family meals?
Yes. This Keto Lemon Cheesecake can be prepared in advance, sets well, and is an excellent low-carb dessert option for small gatherings and family meals.
