Ingredients

  • 1 large onion, sliced into rings- 1/2 inch thick

  • 3 tbsp coconut flour

  • 2 large eggs

  • 2/3 cup pork rinds

  • 3 tbsp almond flour

  • 1/4 tsp sea salt

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

Directions

  • In the first bowl, add coconut flour and sea salt. Stir to combine.
  • In the second bowl, crack egg and whisk with a fork.
  • In the third bowl, add pork rinds, almond flour, paprika, and garlic powder. Stir well.
  • Lightly grease 2 air fryer oven racks.
  • Dredge an onion ring in coconut flour then dip in beaten egg. Shake off the excess and coat evenly with the pork rind mixture.
  • Place into prepared air fryer oven racks. Repeat until no onion ring remains. Make sure to give rings enough room so that they are not stick to each other.
  • Preheat the air fryer oven racks to 400 degrees F for 2 to 3 minutes.
  • Place both racks into the air fryer oven. Bake for about 8 minutes, until the top layer is golden. Switch racks and bake for 8 more minutes, until the top layer is golden again.

Notes

  • If you bake these keto onion rings over an air fryer basket, just place half of them into the basket then bake for 16 minutes, until golden. Once cooked, remove from the basket and arrange the next batch of uncooked rings for baking.
