Ingredients

  • For the crust
  • 1 medium- sized head of cauliflower, cut into chunks

  • 1 egg

  • 1/4 cup shredded Parmesan cheese

  • 1/4 cup mozzarella cheese

  • 1/4 teaspoon salt

  • 1/2 teaspoon garlic powder

  • For the topping
  • 1-2 cups mozzarella cheese

  • 1 cup marinara sauce

  • 1/2 teaspoon basil or rosemary minced (or dry)

  • 1/2 teaspoon oregano minced (or dry)

Directions

  • Preheat oven to 500 degrees F.
  • Place the cauliflower into a food processor and pulse it until it resembles the texture of rice. You can also grate or chop it very finely.
  • Microwave the processed cauliflower uncovered in a microwave safe bowl for approximately 4-5 minutes on high.
  • Remove it from the microwave and allow it to cool for at least 4-5 minutes.
  • Once ready, place it in a kitchen towel and squeeze all the liquid out of it. Be sure to squeeze as much liquid as humanly possible.
  • In a large mixing bowl, combine cooked cauliflower, egg, garlic, cheese, and seasonings. Stir until it becomes dough-like.
  • Spread the mixture evenly over lightly greased parchment paper or a pizza pan in the shape of a pizza crust.
  • Bake in the preheated oven for 10-15 minutes (depending on your oven) or until the crust is golden and crispy.
  • Remove from the oven. Top with marinara sauce and cheese.
  • Bring the pizza back to the oven; turn on the broiler, bake for about 2-5 minutes until the cheese melts.
  • Once cooked, remove from the oven; spread with rosemary and oregano immediately. Let it cool for 7 minutes. Slice and serve.

  • When you bake the pizza on the broiler, make sure to keep an eye on it so that the cheese doesn’t get burn.
