Ingredients

  • 3 lbs top round beef, cut into strips

  • 1 can Cola Zevia

  • 1/2 cup liquid aminos

  • 1/4 cup rice wine vinegar

  • 3 tbsp liquid smoke

  • 1 tsp red pepper flakes

  • 1/2 tsp black pepper

  • 3/4 tsp Paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp ground ginger

  • bamboo skewers

Directions

  • Pour a can of zevia into a gallon-size ziplock bag. Add in the soy sauce, rice wine vinegar, liquid smoke and seasonings.
  • Trim the top round of any excess fat and cut into strips to desired size.
  • Add beef strips into the marinade and shake around. Seal the bag (removing any excess air) and place the bag into a bowl so there is no leakage.
  • Place the bowl into the fridge for at least 4 hours and up to 24 hours.
  • Once marinated, remove the bowl from the fridge. Pat the beef dry with paper towels.
  • Using the bamboo skewers pierce the tip of the meat, 5-7 pieces per skewer.
  • Set your oven to its lowest setting and hang the skewers through the grates in the oven so the strips are hanging.
  • Bake for 4 hours remove from oven and serve immediately or store in the fridge up to 1 month.

Notes

  • The baking time might be longer due to the thickness of the beef strips. And, serve it alongside a tasty Keto-friendly salad if you prefer.

FAQ

Is Keto Beef Jerky suitable for a ketogenic diet?
Yes. This beef jerky is made without added sugar and uses keto-friendly ingredients such as liquid aminos, spices, and Zevia cola, making it suitable for a ketogenic and low-carb diet.

Why is top round beef used for jerky?
Top round is a lean cut of beef, which is ideal for jerky because it dries well and results in a chewy texture without becoming greasy or spoiling quickly.

Does the Zevia cola make the jerky sweet?
Zevia cola adds flavor and helps tenderize the meat without adding sugar. It does not make the jerky noticeably sweet and remains keto-friendly.

Can I replace liquid aminos with soy sauce?
Yes. Soy sauce or tamari can be used as a substitute, but liquid aminos are often preferred for their slightly lower sodium and cleaner ingredient profile.

How long should the beef be marinated?
The beef should be marinated for at least 4 hours to absorb flavor. For deeper flavor, marinating overnight or up to 24 hours is recommended.

Why should excess fat be trimmed from the beef?
Fat does not dehydrate well and can cause jerky to spoil faster. Trimming excess fat helps extend shelf life and improves texture.

Is an oven the only way to make this jerky?
No. While the oven method works well, this jerky can also be made using a food dehydrator if available, following similar drying times.

How do I know when the jerky is done?
The jerky is done when it is dry but still slightly pliable and cracks when bent without breaking completely.

How should Keto Beef Jerky be stored?
Store the jerky in an airtight container in the refrigerator for up to one month. For longer storage, vacuum sealing is recommended.

Is Keto Beef Jerky good for parties and snacks?
Yes. Keto beef jerky is a convenient, high-protein snack that works well for game days, road trips, parties, and quick hunger relief for both keto and non-keto eaters.
