Ingredients

  • For the beef:

  • 1 1/2 pounds beef chuck, trimmed and cut into cubes

  • 1 tbsp olive oil

  • For the vegetables and spices:

  • 6 oz turnip, peeled – large dice

  • 5 oz celery, sliced

  • 4 oz carrots, rolled

  • 4 oz string beans, cut

  • 3 oz onions, diced

  • 2 cloves garlic, sliced

  • 32 oz low sodium beef broth

  • 1/2 cup red wine

  • 2 tbsp tomato paste

  • 2 tsp beef base

  • 2 tsp gelatin powder

  • 1 tbsp porcini mushroom powder

  • 2 whole bay leaves

  • 2 whole cloves

  • For seving:

  • 4 tbsp butter

  • 1 tsp dried thyme, rubbed

  • 1/2 tsp dried marjoram, rubbed

  • salt and pepper to taste

Directions

  • Turn pressure cooker on, press “Sauté”, and wait 2 minutes for the pot to heat up. Brown the beef in batches. Bring all the beef back to the pot. Press “Cancel” to stop sautéing.
  • Add all vegetables and spices to the pot (except those added after cooking) and stir together. Cover the pressure with the lid and press “Soup” for 1 hour.
  • Once cooked, carefully do a quick release.
  • Remove the lid. Stir in thyme and marjoram. Adjust seasoning with salt and pepper to taste. Stir in the butter. Serve immediately.
