Ingredients
6 ounces Cabot Pepper Jack cheese, grated
1 1/2 cups finely ground blanched almond flour, plus more for dusting
1 large egg
1 tbsp butter, melted
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp red pepper flakes
Coarse salt for sprinkling
Directions
- Preheat the oven to 300 degree F. Line a work surface with a silicone baking mat. Sprinkle the mat with almond flour.
- In a large mixing bowl, add almond flour, salt, garlic powder, red pepper flakes and the egg; stir to combine.
- Using a rubber spatula, knead the dough up against the sides of the bowl. Add in some almond flour, if needed.
- Transfer the dough to the prepared work surface. Top with a piece of parchment or waxed paper. Roll out the dough as thinly as you can, no more than about 1/8 inches thick.
- To make the crackers, cut the dough into the desired shape and size; using a pizza wheel or a sharp knife. Take a fork and prick the crackers a few times to make little circles in the middle.
- Coat the dough with the melted butter and sprinkle with the coarse salt, pressing lightly to adhere.
- Transfer the silicone mat to a large baking sheet. Bake in preheated oven 20 to 30 minutes, until golden brown and the edges are crispy.
- Once baked, remove from the oven; let cool 10 minutes. Serve.

FAQ
Are Keto Cheese Crackers suitable for a ketogenic or low-carb diet?
Yes. These crackers are made with almond flour, cheese, butter, and egg, all of which are low in carbohydrates and suitable for keto and low-carb diets.
Do these crackers taste like regular crackers?
They have a crunchy texture similar to traditional crackers, with a rich, cheesy and slightly spicy flavor from the Pepper Jack cheese.
Can I use a different type of cheese instead of Pepper Jack?
Yes. Cheddar, mozzarella, Colby Jack, or Parmesan can be used. Keep in mind that flavor and crispness may vary depending on the cheese.
How thin should the dough be rolled?
The dough should be rolled very thin, about 1/8 inch thick or less. Thinner dough results in crispier crackers.
Why do I need to prick the dough with a fork?
Pricking the dough prevents air bubbles from forming during baking and helps the crackers bake evenly.
Can these crackers be made ahead of time?
Yes. Once fully cooled, they can be made in advance and stored for later use.
How should Keto Cheese Crackers be stored?
Store them in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week to maintain crispness.
Can these crackers be reheated if they soften?
Yes. You can re-crisp them in the oven at 300°F for a few minutes until crunchy again.
Are these crackers kid-friendly?
Yes. Kids usually enjoy the cheesy flavor. You can reduce or omit red pepper flakes if serving to children.
What can I serve with Keto Cheese Crackers?
They pair well with keto cheese sauce, guacamole, low-carb dips, charcuterie boards, or soups and salads.
