Ingredients
3/4 cup (3 oz) sugar free chocolate chips
1 1/2 cup (6 oz) almond meal
1/2 cup (3.5 oz) salted butter
3/4 cup (4.5 oz) erythritol
1 tsp vanilla extract
1 large egg
1/2 tsp baking powder
1/4 tsp salt
1/2 tsp xanthan gum (optional)
Directions
- Preheat the oven to 355 degrees F. Microwave the butter for 30 seconds to melt.
- Transfer butter to a mixing bowl and beat with the erythritol. Add vanilla and egg and mix on low for 15 seconds.
- Add almond flour, xanthan gum, baking powder and salt to the bowl. Mix until well combined.
- Press the dough together and remove from bowl. Combine chocolate chips into dough mixture with your hands.
- Roll the dough to make 12 balls; using a small ice cream scoop. Place on a baking tray and bake in preheated oven for 10 minutes.
