If you are big fan of fries, satisfy your appetite with these crispy keto roasted beets while adopting a low-carb diet.

Ingredients

  • 2 large red or golden beets

  • 1 tablespoon olive oil

  • 1 teaspoon harissa spice

  • 1/4 teaspoon cumin

  • salt and pepper

  • 2 tablespoons grated Parmesan

  • parsley chopped (optional)

Directions

  • Preheat the oven 400 degrees F. Line a baking pan with parchment paper.
  • Peel beets and slice off both ends. Cut them up into ¼ inch long slices.
  • Place beets into prepared baking pan. Drizzle with olive oil and coat with your hands. Then sprinkle harissa spice, cumin and a dash of salt and pepper.
  • Roast in preheated oven for 15-25 minutes, flipping them through the process after 10 minutes, until they are nice and soft.
  • Remove from the oven and top with Parmesan cheese. Serve.
