A perfect homemade meal for very busy days at work and lazy weekends? The creamy Keto Tuna salad would be the way to go.

Ingredients

  • 4 oz. celery stalks, finely chopped

  • 2 scallions, finely chopped

  • 5 oz. tuna in olive oil

  • 3/4 cup mayonnaise

  • 1/2 lemon, zest and juice

  • 1 tsp Dijon mustard

  • 4 eggs

  • 1/2 lb Romaine lettuce

  • 4 oz. cherry tomatoes

  • 2 tbsp olive oil

  • Salt and pepper

Directions

  • In a medium bowl, combine tuna, lemon zest and juice, mayonnaise and mustard. Stir well and season with salt and pepper. Set aside.
  • Add eggs to a saucepan, and add water until it covers the eggs. Bring to a boil and let simmer for 5-6 minutes (soft-medium) or 8-10 minutes (hardboiled).
  • Once cooked, remove from pan and place in ice-cold water immediately. Divide them into wedges or halves.
  • Place tuna mix and eggs on a bed of romaine lettuce. Add tomatoes and drizzle olive oil on top. Season with salt and pepper to taste. Enjoy!

Notes

  • Aside from tomatoes, you can top the tuna mix with fresh vegetables and fruits to your liking (avocado, cucumber…).Also, add some shredded chicken if you like.
