Ingredients

  • 2 cups (7 oz) almond flour

  • 1 tsp (0.2 oz) baking powder

  • 1/2 cup (3.5 oz) butter, melted

  • 2 tbsp (1 oz) coconut oil

  • 7 large eggs

  • 1/2 tsp xanthan gum

  • 1/2 tsp salt

Directions

  • Preheat the oven to 355 degree F. Line the bottom of a 8.5 x 4.5 in loaf pan with parchment paper.
  • In the large bowl, fork whisk the eggs for about 1-2 minutes. Add in coconut oil and melted butter. Stir until well combined.
  • Add in almond flour, baking powder, xathan gum and salt to the bowl. Mix well.
  • Transfer the batter to the prepared loaf pan. Press the top evenly with your hands, forming a rounded top.
  • Bake in preheated oven for 45 minutes, until deep golden.
  • Once baked, let it rest in the oven for 5 minutes; remove and let cool completely. Slice and serve.

  • You can store your bread in an airtight container in the fridge and use within 7days. Don’t forget to lightly roast them before serving.
