Ingredients
30 oz. chicken thighs or chicken drumsticks
30 oz. rutabaga
4 1/4 oz. butter or olive oil
1 tbsp paprika powder
salt and pepper, to taste
1 cup mayonnaise
Directions
- Preheat the oven to 400°F.
- Split the chicken quarters and place them in a baking dish.
- Peel the rutabaga and cut into 2-3 inch pieces. By doing so, chicken and rutabaga pieces can be done at the same time.
- Add salt and pepper to taste. Sprinkle with paprika on top. Place in the baking dish.
- Add olive oil/butter and mix well. Bake in the oven for about 40 minutes, until the chicken is thoroughly cooked. Lower the heat towards the end if the chicken or rutabaga is getting too golden brown.
- Once cooked, remove from the oven; let cool for 5 minutes. Serve with a generous amount of mayonnaise.
Notes
- Aside from mayonnaise, you can definitely serve your baked rutabaga chicken with a favorite low-carb dipping sauce.
FAQ
Is this Keto Chicken Dinner suitable for a ketogenic or low-carb diet?
Yes. This recipe uses chicken thighs or drumsticks and rutabaga, which is a lower-carb root vegetable when portioned properly, making it suitable for a keto or low-carb diet.
Is rutabaga keto-friendly?
Rutabaga is higher in carbs than some vegetables but can still fit into a keto diet when used in moderation. It is often chosen as a potato substitute for low-carb meals.
Can I replace rutabaga with another vegetable?
Yes. Cauliflower, turnips, radishes, or broccoli can be used as lower-carb alternatives if you prefer stricter keto macros.
Which cut of chicken works best for this recipe?
Chicken thighs or drumsticks work best because they remain juicy during baking and provide more flavor than lean cuts.
Can I use olive oil instead of butter?
Yes. Olive oil can fully replace butter if you prefer a dairy-free option or a lighter fat profile.
How do I prevent the chicken from drying out?
Using bone-in chicken and baking it with fat (butter or olive oil) helps keep the meat moist. Avoid overcooking and lower the oven temperature if browning too quickly.
Can this recipe be prepared ahead of time?
Yes. You can prep the chicken and rutabaga in advance and store them covered in the refrigerator for up to 24 hours before baking.
How should leftovers be stored and reheated?
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best texture or microwave for convenience.
Is mayonnaise keto-friendly?
Most full-fat mayonnaise is keto-friendly, but always check labels to ensure there are no added sugars or starches.
Is this dish family-friendly for non-keto eaters?
Yes. The simple seasoning and roasted flavors make this dish appealing to both keto and non-keto eaters.
