Giving body some energy boost throughout the morning with these flavorful keto blueberry pancakes, a delicious mix of almond flour, coconut flour, eggs, milk, cinnamon and blueberries.

Ingredients

  • 1/2 cup almond flour

  • 2 tbsp coconut flour

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1-2 tbsp granulated sweetener of choice

  • 3 large eggs

  • 1/4 cup milk of choice

  • 1/4 cup fresh blueberries

Directions

  • Place all ingredients in a high-speed blender, except blueberries, and mix until they become a thick batter.
  • Pour batter into a large mixing bowl and stir through blueberries. Allow to rest for 5-10 minutes, to thicken. Add some more milk if needed.
  • Preheat a greased large non-stick pan over low-medium heat. Drizzle with some oil and spread well. Pour 1/4 cup portions of the batter onto the pan and cover immediately. Cook for 2-3 minutes per side, until the edges golden.
  • Once cooked, serve immediately, or cool completely before storing in the fridge.

Notes

  • If you prefer flourless pancakes, replace almond flour and coconut flour with rolled oats and a medium banana. And, drizzle the cakes with some honey for a better flavor.
