Ingredients
- For the crust
3/4 pound cooked shredded chicken (equivalent to 1 pound raw)
1/2 cup grated parmesan cheese
2 large Eggs
2 cloves garlic, minced
1/2 teaspoon sea salt
- For the topping
1 cup Mozzarella cheese, shredded
1/2 cup Alfredo sauce
3/4 cup spinach
1/3 cup red onion, sliced thin into half moons
Directions
- Preheat the oven to 400 degrees F. Line a pizza peel with parchment paper.
- In a large bowl, add in shredded chicken, grated parmesan cheese, minced garlic, and sea salt. Mix with a spoon or clean hand until well combined.
- Whisk the eggs lightly in a small bowl; add in the chicken mixture. Mix well.
- Dump the chicken pizza crust in the parchment paper on the pizza peel. Spread it as thinly as possible (about 1/4 in thick).
- Slide the parchment paper onto a pizza stone. Bake in preheated oven for 15 to 20 minutes, until firm and golden on the edges.
- Once baked, remove from the oven; let it rest for 10 minutes. Sprinkle evenly with sauce and toppings.
- Return to the oven for 10 to 15 minutes more or until the cheese is melted and the crust is golden brown.
- Once cooked, remove from the oven. Let pizza crust cool for a few minutes. Slice and serve.
Notes
- If you do not eat up all pizza, you can freeze it. Here is what to do: prebake the chicken pizza crust, wrap it tightly and freeze. Once solid, you can move it anywhere in the freezer. When serving, make sure not to thaw the crust first. Instead, you should unwrap it, add in sauce and toppings, then, bake until hot.
