Ingredients
20 oz. chicken breast, cooked and shredded
1 oz. pork rinds
2 cups fresh broccoli (or frozen), cut into small florets
1 cup cheddar cheese, shredded
1/2 cup sour cream
1/2 cup heavy cream
1/2 tsp paprika
1 tsp oregano
2 tbsp olive oil
Salt and pepper to taste
Directions
- Preheat the oven to 450°F.
- Bring a pot of lightly saltwater to boil. Parboil the cauliflower for a few minutes. Drain thoroughly.
- In a deep mixing bowl, combine shredded chicken, broccoli florets, olive oil and sour cream. Mix to combine thoroughly.
- Place the chicken and broccoli into a greased 8×11 inch baking dish. Spread them into an even layer, pressing firmly.
- Drizzle heavy cream evenly over the casserole. Sprinkle with salt, pepper, paprika and oregano on top. Top with shredded cheddar cheese.
- Into a ziploc bag, add 1 oz. of pork rinds and crush them with either your hands or a rolling pin. Add these crushed pork rinds over the shredded cheese for a crispy casserole top.
- Bake for about 20-25 minutes, until the casserole slightly bubbles and the edges brown.
- Once baked, remove from the oven. Let it sit for 5 minutes. Serve.
