The rich creamy Keto Swedish meatballs made with ground beef, almond flour, egg, heavy cream, herbs and spices are also a “must-try” Keto beef dish.

Ingredients

  • 4 tablespoons grass-fed butter, divided

  • 1 medium white onion, finely copped

  • 500 g ground beef

  • 1/4 cup almond flour

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper, freshly ground

  • 1/4 tsp allspice

  • 1/4 tsp nutmeg

  • 1/4 tsp garlic powder

  • 1 egg, lightly beaten

  • 1/2 cup heavy cream, divided

  • Extra virgin olive oil for cooking

  • 1-2 cups beef broth

  • 1 tsp Dijon mustard

  • 1/2-1 tsp arrowroot powder or 1/4 tsp konjac (glucomannan) powder

Directions

  • Melt a tablespoon of butter in a skillet or pan over medium heat. Add onion and a pinch of salt; sauté for about 6-8 minutes, until caramelized. Remove from heat and set aside to cool.
  • In a large mixing bowl, add ground meat, almond flour, salt, spices, cooked onion, egg and 2 tablespoons of heavy cream. Mix until well combined. Use your clean hands to form the dough into into rounds (either 20 small-is ones or 14 large).
  • Heat up olive oil in your skillet over medium heat. Carefully place in meatballs; cook until brown all over and cooked through. Transfer to a plate and cover with foil.
  • Add the remaining butter to the skillet and cook until it begins to brown. Stir in broth, remaining heavy cream and mustard. Allow to simmer for a couple minutes and make a slurry out of your thickener of choice. Continue to simmer until the sauce get thicken to your liking. Taste for seasoning.
  • Bring meatballs back into the skillet, simmer for a couple more minutes and serve right away. Serve alongside mashed cauliflower for a complete meal.

Notes

  • When frying the meatballs, make sure that you to turn them around a few times so that they are browned and cooked evenly.
