Ingredients

  • 1 lb raw peanuts shelled

  • 2 tbsp coconut oil melted

  • 1 tsp vanilla extract

  • 1 tbsp So Nourished Erythritol

  • 1/2 tsp sea salt

Directions

  • Preheat the oven to 350F.
  • In a bowl, combine coconut oil, vanilla extract, erythritol and salt. Add in peanuts and mix well.
  • Line a baking tray with parchment paper, transfer peanut mixture to the tray and bake for 10-12 minutes.
  • Once cooked, remove from the tray. Let cool. Pour the butter into a food processor and blend for 4-5 minutes, until smooth and creamy. Serve.

Notes

  • Spend 20 minutes and you will have flavorful keto-friendly peanut butter. It’s worth, right?
